What's For Dinner?

Fazzoletti della Nonna (Grandmothers Kerchiefs): crepes filled with cooked ground ham, chicken, and bechamel sauce then baked until bubbly. It's quite easy for two people to eat a whole pan of them, believe it or not. :)
 
Grilling season begins tonight (we are going to force summer to come, even if snow is expected on Tuesday) ! A thick-cut pork chop and chicken breasts. Using some pear wood for smoke. Sides are corn on the cob, coleslaw, and baked beans. I might have a Whalers beer with this, instead of wine.
 
Looks like we are going to be snowed in until Thursday at the earliest. That means hearty meals that make great left-overs. Tonight: Classic meatloaf with mashed potatoes and green beans. Tomorrow I can make potato pancakes with left over spuds and cold meatloaf sandwiches for lunch! Woo hoo.
 
My wife is 0% Irish, but insists on making corned beef with root veggies every St. Patrick's Day. Bleh. The only good part about making corned beef is the hash you can make for breakfast and sandwiches the next day.

I am making shrimp marinated with ouzo and tarragon and then grilled over wood. And....yeah, probably a few potatoes and a wedge of boiled cabbage on the side. Slainte!
 
Got a good deal on some snow crab legs. Going to bake them and then serve with garlic butter and a green salad.
I've only had snow crab legs once before, at a restaurant, and they were terrible. Never made them myself. This will be a first for me.
 
Made a tasty sandwich last night for dinner: grilled, marinated chicken breasts with melted Muenster, red onion, and arugula or a grilled kaiser rolled with a mayo, chive, and mango chutney spread. Tasty!
 
Going to grill some pork chops tonight. Marinade: garlic, preserved lemon peel, Urfa biber pepper, olive oil, and lemon juice. This promises to be tasty!
