It's for cushioning in packaging. If you went to buy a bag of chips with 5% air, they would most likely be a bag of crumbles. Air is used to protect the produce from being crushed, the same as an airbag in a car.

I would have suspected that explanation.

What's interesting to me is that, if you take a bag of chips up to the mountains, the air pressure will make it expand to its fullest potential, short of popping. That's kind of what my internal organs do; that's why flatulence is such a relief at high elevations.

I guess the dairy syndicate makes them put that on there so that it doesn’t hurt the hormone farmers sales. Guess I’ve never noticed that
