What's For Dinner?

We are going to make Chinese pork dumplings today. My wife went to the store yesterday to buy a head of Napa cabbage and the smallest one was 4lb.
I think we will be making a big crock of kimchi with the rest of it.
 
I'm going to make myself a cod cake with coleslaw on the side. The recipe says to coat the cake with corn flakes or oats before frying. I don't have any corn flakes, so oats it shall be. I think I will pulse them in the food processor a bit first to make the pieces more the size of panko.
 
Today is Greek Orthodox Easter. And while I am not a religious person, my father loved Greek Easter because we always had a big, Greek feast. That's going to be a bit tough this year, but yesterday we made a pan of Pastitsio, which is like a Greek lasagna, which always better the next day. Today we are going to make stuffed grape leaves, a marinated white bean and feta salad, and some Greek rice pudding for dessert, made with arborio rice, cream, and cinnamon.

Going to make pizza tonight with mushrooms, red onion, pepperoni, black olives, and a mixture of mozzarella and Fontina, splattered with splashes of our cherry tomato sauce from last year. I was busy working today, so I didn't have time to make a home-made dough, so my wife bought one at the store. Not sure how airy and delicate it's going to be. I guess I will find out tonight!
 
We are going to make potato and cheese pierogies for dinner tonight. I just made the dough that we used for the Chinese dumplings because it works so easily and has a great texture when cooked. They will be pan fried on one side and then steamed until done. They will be served along side some kielbasa and braised, spiced, red cabbage.
