What's For Dinner?

A bought some beef brisket and some beef chuck roast the other day. Cut it into chunks then trimmed off all the visible fat. Put the meat through my grinder with the coarse holes. Then the fat went through the coarse holes, followed by the fine holes. Mixed it all together and made burgers. Formed them and put them in the freezer. Cooked them from a frozen state on the grill. This allows you to get a really good, deep char on the outside without over cooking the inside.

These were the juiciest, most "beefy" tasting burgers I have ever had. Glad I have 10 more in the freezer!
What grade was the brisket? Seems odd to take a brisket and turn it to burger. Delicious, but odd.

I don't know. It was a slab about two inches thick with a fat cap on the end. No odd streaks of fat in the interior. And I have read in many places that ground brisket is good in a burger. They weren't lying!
I'm not sure about making a 100% brisket burger, but 50% was fantastic.
 
Falafel wraps tonight. I soaked the dried chickpeas overnight and ground them this morning, added the rest of the falafel ingredients around lunch time, and let the flavors marry all afternoon. Time to form the patties and fry them. Hummus, tzatziki, sweet hot sauce, lettuce, and tomato to be wrapped in as well.
 
Speck und Bohnen. Another Swiss war-time dish from my grandmother and mother. Take a chunk of bacon and throw it into a pot with onions, garlic, winter savory, green beans, a dusting of flour, and chicken stock. Simmer on low until the beans are limp. Throw some cooked jacket potatoes in for the last 10 minutes. So, so satisfying.

The bakery we went to yesterday makes real, German soft pretzels, so we got two and had a favorite street food from my mother's hometown last night for dinner: split the pretzel lengthwise, spread each side with soft butter, add slices of Swiss cheese and tavern ham. Goes perfectly with a beer.

Tonight I am going to grill chicken thighs with pesto.

I will be having broiled shrimp with coleslaw and left over focaccia.
