The heatwave continues, so .....cold food: Orange and arugula salad with red onions and Kalamata olives and curried chicken salad on pitas.
 
My sister-in-law, her husband, and daughter are up visiting for the weekend and they wanted a New England seafood feast. So last night we started with (a local) oysters and cherrystone clams. Then for dinner we had big lobsters, shrimp, tuna steak grilled, haricot vert salad, tomato salad, cucumber salad, and New Jersey white corn (best in the world) they brought up. Rhode Island beer and wine was had, as well. It was epic.

Smoking 3 racks of St. Louis ribs. We coat them in yellow mustard, and then my wife applies her custom dry rub. Smoking them on mulberry and a 5 gallon bucket worth of rose canes.
what do the rose canes add? Never heard of them being a smoking wood.
 
The past week and a half has been in the 90s and humid as fuck. Storm came through last night and dropped the humidity to almost nothing and the high today was 65 with a breeze.

So...cool weather dinner! Raclette!

Making Jose Andres' version of Sopa de Ajo (garlic soup). Smell just like a version of my mother's oat soup, as it should (garlic, oil, starch. broth). But pureed with an egg beaten in makes it silky and smooth. Drizzle with some Spanish olive oil and red wine vinegar. I think I am going to like this.
 
Chicken paillards marinated with lemon zest, lemon juice, grated garlic, olive oil, and oregano. Going to grill and then make into a sandwich on large pitas with labneh, hummus, feta slices, lettuce, and tomato. Yum.

.what? You don't know what that is? Well, then. It's a Swiss dish of pork cutlets cooked with mushrooms and cream and then served with herbed (shallots, garlic, tarragon, parsley) spaetzle (Swiss noodles/dumplings). Greens will be haricot vert from the garden.
