Since it's steamy here today, we are going to make a cold soba noodle salad with tofu chicken strips, cucumbers, scallions and a dressing of soy, fresh ginger, sesame oil, and lemon juice. Topped with shredded cilantro leaves and crushed cashews.
 
Found a new recipe for pan pizza that is based on a very loose, focaccia-style dough.
Let's see how this turns out.
 
Wow, I tried Checkers for the first time in 20 years, and it was much, much better than I remembered. And they are definitely better than McDonald's now.
 
We made soffrito for dinner last night. No, we didn't have a plate of sauteed onions, carrots, and celery. Soffrito is the name of a Greek dish. It's thin slices of beef that are dredged in seasoned flour and then fried until brown, then layered in a pot with chopped parsley, more garlic than should be legal, and white wine and white wine vinegar. The whole thing is simmered until the meat is incredibly tender. We decided it would make great sandwiches, so we put it on toasted buns with some of the sauce, and a traditional Greek salad on the side.
That might be one of the tastiest sandwiches I have ever had.
 
I am making a ragu di cinghiale to be eaten for dinner tomorrow. It's a dish we had in Italy many years ago and I like to make it at least once a year now. It's chunks of boar meat braised for a few hours with lots of bay leaf, garlic, onion, tomatoes, and red wine.
I started cooking it at 9am and will let it go until around 3pm, then pop it in the fridge so the flavors can marry. It will taste good tonight, but it will taste fantastic tomorrow. Served over rigatoni or homemade pici.
Now, I need to figure out what I am going to eat tonight!
