What's For Dinner?

I had to wait until this morning to find out about last night's dinner. :meh:

If I have been remiss in noting my gustatory consummation here in my personal food diary, I apologize. It's almost 5am here now, and just so you can have a fret-free morning when you rise, I will tell you that we plan to make German Rouladen for dinner tonight with either spaetzle or roasted potatoes on the side, and either a salad or green beans as well.
 
@axolotl , the Rouladen are simmering. But there has been a change of plans. We are going to let them rest in the fridge overnight so the flavors marry well and have them tomorrow. Tonight we will have my father's World Famous white bean soup and some bread.

I just finished filling and pinching shut two dozen Maultaschen. These are a Swabian specialty, essentially German ravioli. The filling is made with ground beef, pork, bacon, spinach, herbs, onions, and garlic that is ground to a smooth paste. Then the filling is enclosed with fresh egg dough and poached. Some people eat them just like that, and others (like us) like to then saute them on one side in a pan and then cover them with a Jaeger sauce (brown sauce with mushrooms, shallots, and port). Sides will be sauteed potato cubes and a pickled cucumber salad with sour cream and fresh dill.
 
Someone sent me a recipe for chicken and dumplings which we made last night. While the stew portion was delicious, the dumplings were a mess. They cooked fairly well on the bottom, but the tops remained gummy. I tried to flip them over in the stew so they could cook further in the stew, but to no avail. That's one recipe I won't be making again!
 
Raclette with all the trimmings tonight.
I am also making a pot of cream of tomato soup from a recipe I got from a restaurant in Germany. Bacon, sage, onions, garlic, fresh plum tomatoes, Maggi seasoning. Last time we were in Europe we went to get mid-day supper there and were sad to find out that they had closed. Well, at least I have the recipe now!
